Rediscovering recipes he had inherited from his family, Dana Davenport, Dilettante's founder and chocolatier made Chocolate Covered Dried Cherries using the pan coating candy making method (dragee) in Seattle in the 1970's. The Davenports had brought the dragee method of candy making to the Pacific Northwest many years ago. Today, at Dilettante, we still use the same candy recipes and dragee panning method to make Chocolate Covered Dried Cherries.We start with freshly dried whole cherries. The premium dried cherry centers are then liberally covered in two types of rich gourmet milk and white chocolate.The cherry fruit is coated twice using blends of milk chocolate containing 38.47% cacao and pure white chocolate using Dilettante's gourmet chocolate blends. Revolving dragee pans coat the chocolate cherry confections perfectly and evenly resulting in a luxurious cherry chocolate morsel. By covering dried cherries in red chocolate, we make these chocolate cherry candies both a feast for your eyes and your taste buds.
